it was a pleasant hike in this unique little gem of a wilderness area, although it was pretty close to the road. next time we’ll walk further back away from the main road to get some peace and quiet.

It was nice to get out.  But it was also really cold! I couldn’t bring myself to upload any with my long hair since I so recently chopped it all off and miss it. I’ve been trying to get outside and on photo adventures everyday but today I was exhausted and not feeling that well so I took some time to catch up on some chores I needed to get done.

Homemade wild rice soup is a staple for the winter months.  It’s one of my favorite meals to make because you can throw in anything you like.  I topped it off with some chives, to make it look pretty.  And anytime I make such a delicious creamy soup, I add some bread.

So how’d I make it?  Melted butter in a pan and added anything you want to saute.  I added turkey sausage and carrots and green onions (almonds would be delicious! but i didn’t have any.)  After sauteing for a bit, I added flour until it the consistency was a little runnier than cookie dough.  Then I added milk, and half and half and everything else except for the rice. (add celery or any other vegetables.) Brought to a boil, then I reduced heat and added the wild rice (which I cooked earlier in the day.) Then you just simmer it for a bit (don’t boil!) 

I did season it with a bit of basil and oregano.  You could use garlic or whatever spices you decide.  I would add more salt to the recipe if I redid it.
